A MAUI~LICIOUS HAMBURGER

Add 1/2 cup of Maui~Licious Marinade BBQ Sauce to a pound of ground meat. Make patties. Sauté or BBQ.

A Gourmet MAUI~LICIOUS HAMBURGER

2 lbs. lean ground beef, 8 to 10 tablespoons unsalted breadcrumbs, 2 eggs, 1/2 cup of Half & Half fat free cream, 8 to 10 tablespoons of Maui~Licious Marinade BBQ Sauce, mix the entire mixture, make into paddies, pan fry or BBQ.  Use light olive oil or Margarine.

FOR LARGER QUANTITIES, DOUBLE THE AMOUNT OF ALL INGREDIENTS

MAUI-LICIOUS CHICKEN

Prepare Maui-Licious Chicken either in the oven or the BBQ grill. Prepare as much chicken as required for the group being served. Anticipate the Big Eaters and having leftovers. Recommend using boneless and skinless chicken parts.

OVEN PREPARATION

  1. Place chicken pieces in a large mixing bowl.  Add Maui-Licious Marinade.  Mix and let stand for 30 minutes.

  2. Place chicken pieces in a deep baking pan.  Add remainder of marinade from the mixing bowl.  Add additional Maui-Licious Marinade to provide sufficient coating of pieces.

  3. Place in pre-heated oven at 325o for 1 1/2 hours.

  4. At the end of 1 1/2 hours, add sliced round onion rings (red or yellow), bell pepper strips and diced pineapple in an amount to lightly cover the chicken pieces.

  5. Baste the onion, bell pepper and pineapple with the Maui-Licious Marinade juices.

  6. Bake for an additional 30 minutes.

  7. Remove and serve.

BBQ GRILL PREPARATION

  1. Place the required number of pieces of chicken in a mixing bowl.  Add a sufficient amount of Maui-Licious Marinade and mix.  Cover and let stand for 2 to 3 hours.  You can use chicken pieces that are with or without skin and bones.

  2. Wire brush BBQ grill grate.  Wipe heated grate down with cloth with a generous amount of olive oil.

  3. Place chicken parts on the grate.  Set burner to low position.  Baste and turn chicken parts.  Avoid burning.  Remove when cooked and baste with additional Maui-Licious Marinade.

     A MAUI~LICIOUS STEAK

Place steaks in mixing bowl. Add Maui~Licious Marinade BBQ Sauce. Marinate steaks for 4 to 5 hours or leave in refrigerator overnight. Pre-heat grill. Wire brush. Brush grill down with light coat of olive oil or other cooking oil. Using medium flame, cook to desired degree.

MAUI~LICIOUS SPARE RIBS

  1. Use one rack (or more) of Meaty Pork Ribs.
  2. Cut rack into individual ribs.
  3. Place rids in large pot.
  4. Add water to cover.
  5. Add 1 cup of salt.  Salt is used to wash and de-grease the ribs.  Using your hands, wash the ribs, 10 to 15 minutes of scrubbing action.
  6. Rinse ribs of salt.  Rinse 3 to 4 times.
  7. Fill pot with water just covering the ribs.  Bring to a slow boil for 15 to 20 minutes.  Drain all water.  Add Maui-Licious Marinade in sufficient amounts to coat all ribs.  Let ribs marinate for 1 to 2 hours.

BAKING INSTRUCTIONS

  1. Pre-heat oven to 325o.

  2. Place ribs in deep baking pan.  Spread ribs out.

  3. Bake ribs for 1 1/4 to 1 1/2 hours.

  4. Turn ribs after the first 30 to 45 minutes.

  5. Ready to serve.

BBQ GRILL

  1. Pre-heat grill.  Best grill to use is one with an elevated warming basket arrangement.

  2. Use one burner set to "low".

  3. Rotate ribs every 15 minutes.  Do additional basting with Maui-Licious Marinade.

  4. Cook for 1 1/4 to 1 1/2 hours.  Check as needed.  Avoid burning.

MAUI-LICIOUS STIR-FRY

The following recipe is not just tasty, but a quick nutritious meal that is easy to prepare for the busy housewife or budding chef.

INGREDIENTS

bulletUse a large package of pre-cut assorted vegetables or the same by way of cutting your own select vegetables.  You can add the following by choice: celery, snow peas, broccoli, green onions, bamboo shoots, water chestnuts, thin slices of orange, green string beans, etc.
bulletThin slice a choice piece of beef, Rib-eye or tender cut of beef.

bulletMaui-Licious Marinade

COOKING INSTRUCTIONS

bulletSauté in thin sliced beef in butter.  Add mushrooms.  Do not over cook.
bulletAdd light coating of olive oil to a wok or deep skillet.  Bring to light sizzle.  Add chopped vegetables.  Stir-fry for 5 to 7 minutes.
bulletAdd meat and mushrooms.  Add Maui-Licious Marinade season to taste.

This recipe can be made using meat, chicken, pork and with various types of sausages (slice diagonally).

DIPS AND SALAD DRESSINGS

Add one half cup of Maui~Licious Marinade BBQ Sauce to one cup of mayonnaise, sour cream, cottage cheese, cream cheese, blue cheese, or Roquefort cheese for dips and/or salad dressings. Blend to your level of taste. For larger mixes, increase portions proportionately.

BASTING

When you BBQ, baste food products with Maui~Licious Marinade BBQ Sauce using a food brush. Baste again upon removal and prior to serving.

BACON AND EGGS

Add portions of marinade to raw eggs, scramble as usual. Use in place of ketchup.

DEEP FRIED SHRIMP

Use frozen in-shell shrimp, 21-25 count work well.  Thaw and clean, marinate in Maui~Licious Marinade BBQ Sauce, then deep fry in your favorite batter.  Have a bowl of Maui~Licious Marinade BBQ Sauce for dipping.  An excellent treat!

Goodman's Special

Try it on a "borracho chicken".  Cook the chicken on a beer can with
onion
& spices and then baste it with Maui~Licious Marinade BBQ Sauce.  It came out great.


MAUI-LICIOUS TRI-TIP

This dish is a fabulous entree and can be served with a variety of vegetables.  It will serve 4 to 6 people.  As always, make plenty, leftovers are great for sandwiches.

Start with 3 to 5 pounds of select Tri-Tip

Prepare either with BBQ grill or oven using the following suggestions:

BBQ Grill

  1. Brush/coat the entire Tri-Tip with olive oil

  2. Place on pre-heated BBQ grill with burners on high

  3. Singe both sides trapping meat juices

  4. Remove from the grill and place in a shallow dish or try for a generous basting with Maui-Licious Marinade

  5. Grill each side on low for 10 minutes while frequently basting

bulletOven Bake
  1. Marinade Tri-Tip in large Zip-Lock plastic bag
  2. Let meat marinade for 2 to 4 hours
  3. Use large cast iron frying pan and set burner on high
  4. Melt 1/2 cube butter and singe both sides of Tri-Tip
  5. Remove frying pan from burner and place in a preheated oven at 375
  6. Turn and baste with Maui-Licious Marinade every 10 minutes
  7. Bake for 35 to 40 minutes
  8. Remove and serve hot.  Cut meat in slices of 1/4 to 1/2 " in thickness
  9. Use meat juices to cover servings
